Cod backed in parchment paper packets with fennel, onions and kalamata olives. Delicious!

Ingredients

Cod or any white fish (4 nice size fillets) approx 2 lbs.
1 large onion - thinly sliced
1 fennel bulb - thinly sliced
1/2 cup pitted Kalamata olives - diced
Olive oil
salt
pepper
garlic powder
Parchment paper

Ingredients

Cod or any white fish (4 nice size fillets) approx 2 lbs.
1 large onion - thinly sliced
1 fennel bulb - thinly sliced
1/2 cup pitted Kalamata olives - diced
Olive oil

pepper
garlic powder

Directions

Dice onion, fennel and olives. Create four seperate piles. At this point, keep the olives seperate from the onion and fennel.

Tear off large peace of paper, place on the bottom 1 pile of the onion and fennel. Lay 1 cod or any white fish fillet on top. Then place olives on top of fish.

Season with salt, pepper and garlic powder. Drizzle olive oil over the fish.

Fold up parchment paper to create a packet that the fish will cook in. Repeat until all 4 packets are done. Place horizontally accross a large cookie sheet.

Cook at 400 for approx 20 minutes.
