A Depression-era pantry trick that dressed up post-war American kitchens for decades. Miracle Whip (or any mayonnaise-style dressing) does the work usually handled by butter, oil, and eggs combined. The salad dressing already contains all three plus vinegar, so a single ingredient covers fat, emulsifier, and the leavening reaction with baking soda.

The result is a spice cake with an unbelievably moist crumb and zero noticeable mayo flavor. The vinegar tang cuts the molasses sweetness rather than reading as savory; the eggs contribute structure; the oil keeps everything tender for days. Cakes made this way famously stay moist longer than butter cakes, which is why frugal home bakers have leaned on this trick for nearly a century.

Cinnamon, cloves, and nutmeg form the warm spice trio. Two tablespoons of molasses deepens both flavor and color, pushing the cake toward gingerbread territory without committing fully. The cake bakes plain, which means it pairs well with cream cheese frosting, a powdered sugar dusting, or just a cold glass of milk.

Pro Tips

  • Use full-fat Miracle Whip or mayonnaise. Light or fat-free versions throw off the cake’s moisture and texture.
  • Sift the spices and dry ingredients together. Cloves and cinnamon clump and leave concentrated bitter spots if not dispersed.
  • Add liquids and dry alternately as the recipe calls for. Dumping all at once leaves dry pockets in the batter.
  • Test for doneness at the lower end of the bake time. Mayo cakes overbake fast and turn dry from the edges inward.

Variations

  • Add a half cup of chopped raisins or dates to the batter for fruit and chewy texture.
  • Stir in a quarter cup of chopped walnuts or pecans for crunch.
  • Substitute brown sugar for the white sugar for an even deeper, more molasses-forward cake.
