1 Pie
suggest servings
| 1 1/2 | cups | sweet potatoes, or yams | cooked, puree |
| 1 1/4 | cups | sugar | |
| 1/2 | cup | butter | or margarine, melt |
| 1/4 | cup | evaporated milk | skim |
| 3 | large | eggs | |
| 1 | teaspoon | nutmeg | ground |
| 1 | teaspoon | vanilla extract | |
| 3/4 | teaspoon | lemon extract | |
| 1 | each | pie shell (9 inch) | unbaked, deep-dish |
Preheat oven to 350F.
In processor combine all ingredients except crust.
Process until well-blended.
Pour into unbaked pie shell. Bake for 50 to 55 minutes or until knife inserted in center comes out clean and pie is golden-brown.

As I have a large family, I tripled this recipe. Only, I added vegetables, bacon, and cheese. The potato flakes do help with texture but instead of milk, try heavy cream. It makes for a really good, hearty soup.
