Ingredients

3 large eggs
1 1/2 cups sugar
1/2 cup vegetable shortening liquid
1 1/2 cups milk
2 tablespoons vanilla extract
3 cups flour, all-purpose
2 teaspoons baking powder
1 cup chocolate chips
1 can cherry pie filling
Topping
1 cup biscuit baking mix (bisquick)
1/2 cup sugar
1/4 cup butter or oleo
1/2 cup chocolate chips for garnish

Directions

Beat eggs, add sugar, shortening, milk and vanilla.

Then add flour and baking powder.

When well mixed add chocolate chips.

Pour into a large greased baking pan.

Drop cherry pie fill by the tsp. in even rows into the batter.

Topping:

Blend with a pastry blender to form loose crumbs.

Sprinkle over top of cake and garnish with chocolate chips.

Bake at 375 for 50 min. to 1 hour until golden brown.

Barbecue Meatloaf

This is so moist and delicious and does NOT call for any added salt, which is great for low sodium diets. I used no salt added tomato sauce also. The sauce is so good you will want to eat it with a spoon!
