| 2 | each | lemon | juice only |
| 2 | cups | okra | or 1 15 ounces can |
| 2 1/2 | pounds | broiler chicken | |
| 1/3 | cups | long grain rice | uncooked |
| 6 | cups | chicken broth | or water |
| 2 | teaspoons | salt | |
| 1 | large | onion | peeled, chopped |
| 1/4 | teaspoon | black pepper | |
| 3 | each | tomatoes | peeled, choppped |
| 1/2 | teaspoon | red pepper flakes | ground |
| 6 | ounces | tomatoe paste | |
| 1 | teaspoon | turmeric | ground |
Cut up broiler-fryer chicken.
If using can of Okra, drain it well.
Rub lemon juice over chicken pieces.
Put in a large kettle with chicken broth or water.
Bring to a boil.
Lower heat and cook slowly, covered, 12 minutes.
Add remaining ingredients and continue to cook slowly about 30 minutes, until chicken and rice are tender.
Remove chicken pieces and debone.
Cut meat into small pieces and return to kettle.

Last Christmas was a weird experience in itself. First of all, as a college student you get a longer Christmas break because you finish exams early....
I used ground pork and red cabbage. Was tasty and much easier than going to the trouble to make cabbage rolls, though cabbage rolls are worth the effort if you have the time. I will make this one again.
