Ingredients

6 cups spinach torn, fresh
1 large orange seedless, peeled, and roughly chopped
1/4 cup scallions, spring or green onions chopped
1/2 cup mushrooms sliced
1 tablespoon lemon juice
3 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
3/4 cup almonds slivered, toasted

Directions

Place spinach in a large salad bowl.

Add orange, mushrooms and onions.

Mix together lemon juice, oil, garlic powder, salt and pepper.

Ensure it is well mixed.

Pour over salad and add almonds. Toss gently.

Leek Potato Soup

This recipe sounds very good, but I usually add some cooked bacon to mine and then top each serving with sour cream and chives. Not exactly the "dieter's special", but quite yummy!
