| 2 | cups | raisin bran cereal | |
| 1/2 | cup | flour, all-purpose | |
| 1/2 | cup | wheat germ | or oat bran |
| 1/4 | cup | brown sugar | |
| 2 | teaspoons | baking powder | |
| 1 | teaspoon | apple pie spice | |
| 1/2 | teaspoon | salt | |
| 1 | teaspoon | lemon zest | grated |
| 1 | cup | apple | finely chopped |
| 2 | each | egg whites | |
| 2/3 | cup | apple juice | |
| 1/3 | cup | milk, skim | |
| 3 | tablespoons | vegetable oil |
In a large bowl combine cereal, flour, wheat germ, brown sugar, baking powder, seasonings and apple; set aside.
In a small bowl combine egg whites, apple juice, milk and oil.
Mix well.
Add liquid mixture to dry ingredients; stirring just until moistened.
Line muffin cups with paper baking cups or spray bottoms only with cooking spray; fill 2/3 full.
Bake at 425 degrees F for 12 to 15 minutes.
Try using unsweetended applesauce, pureed prunes, or drained yogurt in place of part or all of the oil.

I live with 3 guys and we found this recipie. i made it once and now they want me to make it all the time. One time we didn't have enough irish cream, but we had a bottle of the caramel irish cream and used it. It's awesome. :)
