Spam Stew with Buttermilk Topping

Ingredients

1 can soup, cream of chicken
1/2 cup milk
1/2 cup onion chopped
1 package cream cheese cubed
1/4 cup carrot shredded
1/4 cup celery chopped
1/4 cup parmesan, parmigiano-reggiano cheese, grated grated
1 can spam cubed
10 ounces broccoli, frozen cooked, cut, and drained
1 cup pancake mix buttermilk
1 cup cheddar cheese shredded
1/4 cup milk
1 each egg beaten
1 tablespoon vegetable oil
1/4 cup almonds sliced

Directions

Heat oven to 375'F.

In large saucepan, combine first 7 ingredients.

Cook and stir until cream cheese is melted.

Stir in SPAM and broccoli; heat thoroughly.

Pour into 2-quart casserole. In medium bowl, combine pancake mix and Cheddar cheese.

In small bowl, stir together milk, egg and oil.

Add to pancake mix; stir until combined.

Spoon topping over SPAM mixture.

Sprinkle with almonds.

Bake 20-25 minutes or until topping is golden brown.
