Ingredients

3/4 cup amaranth flour
3/4 cup flour, unbleached all-purpose
1 1/2 teaspoons baking powder non-alum
1/4 cup sesame seeds ground (use blender or grinder)
1/4 cup sesame seeds
1/4 teaspoon sea salt optional
1 each egg beaten or egg replacer, optional
1/2 cup sesame oil unrefined
1/2 cup tahini
3 tablespoons honey or maple syrup
1/4 cup milk soymilk or water
1 teaspoon lemon extract
1 teaspoon vanilla extract

Directions

Mix dry ingredients and liquid ingredients in separate bowls, then combine and mix well.

Press mixture into an oiled and floured 9" x 13" cake pan.

Bake at 350 F. for 12-15 minutes or until golden brown.

Cool slightly before cutting into small wedges.

Cajun Chicken Pasta

Very easy and quick. Used penne pasta in lieu of linguini. My wife said I was wasting my time, kids would not eat. But, they LOVED it, said they want it again tomorrow. Son said 'you really out-did yourself dad'. Next time I think I'll add some capers.
