A savory spread of sour cream, chopped pistachios, Italian dressing, dry mustard, and sharp cheddar goes on first. The nuts provide crunch and the cheddar brings a tangy depth that anchors everything beneath the toppings.
Smoked ham layered over the spread adds that salty-smoky contrast. Thin shavings work better than thick slices, the sandwich has to stay low enough to take a bite gracefully.
The gelatin-mayonnaise-cream glaze is the “glace” that gives these their name. It sets into a clear, semi-firm coat that seals in the filling and adds that signature shimmer.

Cut ham and place on bread slices, chill 1 hour.
Make gelatin, mix with other ingredients and spread of bread slices.
Chill 1 more hour.
