Peach fizz is a big-batch party drink that combines pureed peaches with limeade and peach gelatin, then gets topped with tonic water right before serving for that signature bubble and fizz. It’s fruity, tart, and refreshing, with a body that’s thicker than plain juice thanks to the dissolved gelatin.

The base starts by dissolving peach-flavored gelatin into hot limeade. This gives the drink a peach sweetness and a slight viscosity that makes it feel more substantial than regular punch. The canned peaches get blended with their syrup into a smooth puree that stirs right in, adding real peach flavor and natural thickness.

Everything chills in the pitcher for at least an hour before the tonic water goes in. Adding the tonic last is critical. Mix it in too early and it goes flat while sitting in the fridge. You want those bubbles fresh and lively when you pour.

Garnish each glass with a lime slice for a pop of green against the peachy coral color.

  • Chill the tonic water well before adding. Warm tonic loses its fizz faster and the drink falls flat.

Directions

  1. In 3-quart pitcher, prepare limeade concentrate as label Measure 1 cup reconstituted limeade into 1-quart saucepan; over high heat, heat to boiling. Remove saucepan from heat. Stir peach flavor gelatin into hot limeade, stirring until gelatin completely idssolves. Stir mixture into limeade in pitcher.
  2. Place half of peaches and their syrup in blender; blend at high speed until pureed. Repeat with remaining peaches and syrup. Stir purée and lime juice into limeade mixture. Refrigerate at least 1 hour or until well chilled.
  3. To serve, stir tonic water into limeade mixture. Garnish with lime slices.
