| 15 | ounces | sea scallops | cut into 1/4's |
| 3 | tablespoons | buttermilk, low-fat | |
| 1/3 | cup | seasoned dry bread crumbs | |
| 1 | x | corn flake crumbs | crushed |
| 1/2 | teaspoon | thyme | ground |
Preheat oven to 500 degrees F.
Spray baking sheet with nonstick spray and set aside.
In a medium mixing bowl, combine scallops and buttermilk, turning to coat.
Let stand at room temperature for 15 minutes to marinate.
In small mixing bowl, combine the bread crumbs (or corn flake crumbs) and thyme.
Dredge each scallop in crumb mixture, coating both sides.
Arrange scallops on baking sheet.
Bake carefully turning scallops over until browned on all sides, about 5 minutes.

Easy to make, the waiting was worst part(3 hr. chill time). It was very "Potent" as it said even after we cut the rum in half like it said. We loved it though and will reduce the rum even more this time! it was thick, creamy and went down so smooth. We doubled the batch and it was gone way to fast for only two people. So, may I suggest a triple or quad batch since the 3 hour wait to chill it seemed so long!!!
