40 minThese might be the smartest cookies you’ll ever bake. Wheat germ adds nutty flavor and nutrition, while orange juice provides both moisture and natural sweetness without a drop of butter or oil.
Allspice brings unexpected warmth, and unsweetened chocolate chips keep things interesting without loading up on sugar.
The dough is intentionally lean, so you get crispy edges and a tender (not cakey) center. At just 12 to 15 minutes in the oven, you’ll have 40 cookies that let you feel virtuous while still satisfying your sweet tooth.
Pro Tips
- Use fresh wheat germ from refrigerated section for best nutty flavor
- Orange juice provides moisture, so don’t add extra liquid
- Unsweetened chocolate chips are key; semi-sweet makes these too sweet
- Lightly oil baking sheets to prevent sticking since there’s no fat in dough
- Cookies will firm up as they cool; remove from pan while slightly warm
Variations
- Cranberry Orange: Add ½ cup chopped dried cranberries to dough
- Lemon Poppy: Replace orange with lemon juice, add 2 tablespoons poppy seeds
- Ginger Orange: Add 1 teaspoon ground ginger and 2 tablespoons minced crystallized ginger
