Ingredients

For the salad:
2 each beets steamed until a fork easily goes in it, about an hour, peeled, sliced into strips
4 cups mixed greens fresh - rinsed, patted dry with a paper towel
1 x goat (chevre) cheese as needed
1 x walnuts chopped, as needed, optional
For the dressing:
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
1 x salt and black pepper as needed

Directions

Mixed green leaves, a few beet juliennes, some crumbled goat cheese, garnish with chopped walnuts.

Use a vinaigrette salad dressing.
