Mixed Vegetables Jaipur Style (Sabji Jaipuri)

Ingredients

1teaspoon cumin seeds
1teaspoon coriander seeds
1tablespoon vegetable oil mild
1medium onion sliced
2tablespoons tomato paste
10each cashew nuts whole
1cup cream, half and half
1tablespoon ghee (clarified butter)
5each cloves whole
5each cardamom pods
1inch cinnamon stick
1medium tomato peeled, chopped
1/2cup cauliflower florets florets
1/2cup broccoli florets
5each brussel sprouts cut in half
1medium carrot cut into 2-inch sticks
1/2cup green beans cut diagonally
1/2cup water
1/2teaspoon cayenne pepper
1/2teaspoon salt or to taste
1/4cup raisins, seedless
1x mint sprigs fresh, for garnish

Directions

Combine cumin and coriander in a small skillet and dry-roast over medium heat for 6 to 8 minutes.

Remove and set aside.

Heat oil in the same pan, add onion and stir-fry until brown, combine cumin-coriander, fried onion, tomato paste, nuts and half of the cream.

Blend into smooth paste and set aside.

Heat ghee in a heavy 2-quart saucepan over medium-high heat Add cloves, cardamom and cinnamon, stir until fragrant.

Add tomatoes and cook until soft.

Add remaining vegetables and stir-fry for 5 minutes.

Stir in ground paste, remaining cream, the water, cayenne, salt and raisins.

Cover cook over medium heat until vegetables are tender.

Garnish with mint sprigs and serve.

Chicken And Shrimp Saute

Very easy and good. I used only green peppers and added a small, sliced onion while sauting. I also added a second can of stewed tomatos as I like more sauce and I used bowtie pasta. It's a keeper.
