Ingredients

2cans fruit cocktail drained, reserve 2/3 cup liquid
1cup orange juice chilled, divided
1package gelatin, flavored orange, or lemon
1each lemon zest grated
2tablespoons lemon juice
1teaspoon vanilla extract
2each egg white at room temp.

Directions

In medium saucepan combine reserved fruit liquid and 1/2 cup orange juice; heat to boiling.

Add gelatin; dissolve completely. Stir in remaining orange juice, lemon peel, lemon juice and vanilla.

Chill until partially set (60 to 70 minutes).

Add egg whites; beat with electric mixer until double in size and creamy (5 to 7 minutes).

In serving bowl spread half the fruit cocktail.

Top with gelatin mixture; chill until firm. Top with remaining fruit and serve.

Favorite Banana Bread

I was looking for new banana bread recipes and this one caught my eye. The orange zest seemed like a nice touch. I modified it somewhat by starting with the wet ingredients and then adding the dry (which I didn't bother to sift). I also added 1 tsp. of vanilla and 3/4 cup coarsely chopped walnuts. I sprayed the pan with cooking spray and coated it with a fine layer of sugar. I'm eating a slice now, warm from the oven, and it is fantastic. Moist, not too heavy, with a wonderful flavor. I laughed at the yield of three servings, but I know I could easily eat a third of a loaf!
