Lemony Cheesecake with Fresh Fruit

Ingredients

1 x nonstick cooking spray
1/4 cup graham cracker crumbs
16 ounces cream cheese (nonfat) not in tub
1 can milk, low fat, sweetened, condensed
4 each egg whites
1 each egg
1/3 cup lemon juice from concentrate
1 teaspoon vanilla extract
1/3 cup flour, all-purpose
1 cup assorted fruits fresh

Directions

Preheat oven to 300 degrees F.

Spray bottom of 8-inch springform pan with cooking spray, sprinkle crumbs on bottom of pan.

In mixer bowl, beat cheese until fluffy.

Gradually beat in condensed milk until smooth.

Add egg whites, egg, lemon juice and vanilla, mix well.

Stir in flour.

Pour into prepared pan. Bake 50 to 55 minutes or until center is set.

Cool. Chill. Serve with fruit.

Refrigerate leftovers.
