Huevos rancheros are the breakfast plate that defines weekend mornings in northern Mexico and the American Southwest: warm corn tortillas underneath two sunny-side-up eggs, spooned with green chile, and showered with melted cheddar. A scoop of refried beans on the side, and that’s the whole meal.

The shortcut here is using piping-hot canned green chile instead of building a salsa from scratch, which keeps the cook time under 20 minutes without sacrificing the dish’s character. The microwave finish is unconventional but smart: it melts the cheese over the eggs without overcooking the yolks, so you still get that gushing yolk when you cut in.

Kitchen Tips

  • Warm tortillas directly over a gas flame or on a dry skillet for 6 to 10 seconds per side. Microwaved tortillas go gummy, dry-toasted ones stay pliable and develop a bit of char.
  • Cook eggs in butter or bacon fat in a nonstick pan, covered, for the cleanest sunny-side-up. The lid traps steam and sets the whites without flipping.
  • Heat the green chile separately on the stovetop, not from cold cans. Cold chile cools the whole plate down before you can eat it.
  • Layer the chile under the cheese so it melts the cheese from below into a glossy sauce.

Directions

Warm corn tortillas on grill, about 6 to 10 seconds each side.

On serving plate, place 2 cooked eggs atop each heated tortilla; add a side of refried beans.

Top eggs with piping hot green chili and cheeses as desired.

Buzz in microwave until cheese melts.

Serve immediately.

Used tortilla chips instead if corn tortillas and added salsa and sour cream. Was worried how my 7 year old daughter was going to react as this breakfast was far outside her typical breakfast fair - she gobbled it up! Loved dipping the tortilla chips in the runny egg yolks and scooping the salsa sour cream and even dug into the redried beans a bit. Overall she gave it a thumbs up!
