Comments
Used tortilla chips instead if corn tortillas and added salsa and sour cream. Was worried how my 7 year old daughter was going to react as this breakfast was far outside her typical breakfast fair - she gobbled it up! Loved dipping the tortilla chips in the runny egg yolks and scooping the salsa sour cream and even dug into the redried beans a bit. Overall she gave it a thumbs up!
