The tomatoes get pulsed in a blender just enough to break them down but not puree them smooth. You want chunky texture in the sauce, not a thin liquid. The green chiles add mild heat and a roasted flavor that pairs naturally with the softened onions and tomatoes.
Slide each egg in gently from a small plate rather than cracking directly into the skillet. This protects the yolks from breaking and lets you place them evenly across the sauce.

- Keep the heat gentle once the eggs go in. A hard boil toughens the whites and breaks the yolks. A low simmer is what you want.
- Cover the skillet so the steam cooks the tops of the eggs evenly. Without a lid, the bottoms overcook before the whites set on top.

Heat oil in large, deep skillet.
Add onions and cook until tender but not browned.
Place tomatoes in blender or food processor and blend until chopped but not pureed.
Add tomatoes and chiles to onion and cook 5 minutes.
Add water, salt, sugar and pepper and cook 5 minutes longer.
Break each egg, one at a time, onto small plate and slide into hot water mixture carefully so as not to break yolk.
Arrange 1 cheese slice on top of each egg.
Cover and cook gently 5 to 8 minutes, or until eggs are set and cheese is melted.
