This colorful Indian side dish proves that vegetables don’t need complicated techniques to taste incredible, just the right spices and a little love.

Grated carrots and celery get a quick sauté with scallions, garlic, and turmeric, then simmer in vegetable stock spiked with fresh ginger and ground coriander.

Fresh grated coconut adds tropical richness while frozen spinach (thawed and drained) brings earthy green goodness.

The whole thing comes together in 30 minutes flat, making it perfect for busy weeknights when you want something healthy and flavorful.

Directions
