Ingredients

3 tablespoons butter
4 each shallots chopped
1 medium apples, granny smith peeled, cored, diced
1 pinch dill weed
2 teaspoons curry powder mild
2 tablespoons flour, all-purpose plain
1 cup apple juice
1 pound scallops
1 each banana sliced
1/2 pound prawns green, cut into bite-size pieces
1/2 cup cream
1 x salt to taste

Directions

Melt butter in saucepan, sauté apple and shallots until soft.

Add curry powder and cook for a minute longer.

Stir in flour, add apple juice.

Bring to boil, stirring constantly.

Add salt and dill, simmer for 5 minutes.

Add prawns and scallops, cook until almost tender, add banana 5 minutes before end of cooking time.

Stir in cream, heat through. Serve with fluffy or fragrant rice.
