Ingredients

1cup white beans large, dried
2Quarts water
1cup celery sliced, inch pieces
2cups onion chopped
4each carrot inch slices
1/2cup parsley leaves chopped
1tablespoon tomato paste
1cup olive oil
1tablespoon oregano crushed
3tablespoons wine vinegar

Directions

Bring beans to a boil in the water.

Reduce heat and simmer for an hour.

Add remaining ingredients.

Simmer for 2 more hours.

Add salt and pepper to taste.

Serve with crusty bread.
