| 1 | cup | white beans | large, dried |
| 2 | Quarts | water | |
| 1 | cup | celery | sliced, inch pieces |
| 2 | cups | onion | chopped |
| 4 | each | carrot | inch slices |
| 1/2 | cup | parsley leaves | chopped |
| 1 | tablespoon | tomato paste | |
| 1 | cup | olive oil | |
| 1 | tablespoon | oregano | crushed |
| 3 | tablespoons | wine vinegar |
Bring beans to a boil in the water.
Reduce heat and simmer for an hour.
Add remaining ingredients.
Simmer for 2 more hours.
Add salt and pepper to taste.
Serve with crusty bread.
