| 6 | each | potatoes | unpeeled and cubed |
| 1/4 | cup | butter | |
| 1 | ounce | onion soup mix | |
| 1 | cup | cheddar cheese | shredded |
| 1/4 | cup | scallions, spring or green onions | chopped |
Place potatoes in a lightly greased 12 x 8 x 2 inch baking dish; dot with butter and sprinkle with onion soup mix.
Cover with aluminum foil and bake at 400 for 30 minutes.
Stir mixture and bake an additional 30 minutes.
Uncover and sprinkle with cheese and green onions.
