This is pure Louisiana in a baking pan. Chopped crawfish tails folded into a savory quick bread batter with green onions, parsley, garlic, and thyme. Every slice is studded with tender bites of crawfish surrounded by a soft, eggy crumb.

The batter is straightforward: melted butter, flour, and eggs beaten together, then milk, leavening, and seasonings stirred in. It comes together like a thick pancake batter rather than a kneadable dough. The crawfish tails get chopped just slightly before folding in so they distribute evenly but still give you recognizable pieces in every bite.

Thyme and garlic keep the seasoning simple and Cajun-appropriate. This isn’t a heavily spiced bread. The crawfish flavor is the focus, and the herbs support it without competing.

This works as a side with gumbo, jambalaya, or red beans and rice. It also holds up on its own as an appetizer sliced and served warm.

Kitchen Tips

  • Make sure the crawfish tails are well drained before chopping. Excess liquid will make the bread soggy in the center.
  • Chop the tails “just a little” as the recipe says. You want chunks, not a paste.
  • The bread is done when a toothpick in the center comes out clean. Start checking at 30 minutes since oven temperatures vary.

Directions

Preheat oven to 375℉ (190℃).

Oil and flour a 9×13×2 inch pan.

In a bowl mix margarine, flour and eggs.

Remove lumps.

Add remaining ingredients and combine.

Place batter in prepared pan and bake for 30 to 40 minutes until done.
