These homemade turkey sausage patties are built on lean ground turkey breast, studded with bits of dried apple for a hint of sweetness, and seasoned with the classic sage-nutmeg-pepper trio that makes breakfast sausage smell like a farmhouse morning.
Oats and egg white hold everything together without adding fat, so the patties stay tender on the inside with a nice sear on the outside.
Eight patties from half a pound of turkey means this recipe stretches further than you’d expect.
Pro Tips
- Snip the dried apple slices with kitchen scissors instead of chopping. They’re sticky, and scissors make quick work of them.
- Wet your hands before shaping patties so the mixture doesn’t cling to your fingers.
- Don’t press down on the patties while cooking. Let the skillet do its job and you’ll get a better crust.

Spray a cold 10 inch skillet with nonstick coating spray; set aside.
In a medium bowl, combine the egg white, onion, dried or fresh apples, quick-cooking oats, parsley, salt, sage, nutmeg, pepper and ground red pepper.
Add the ground turkey; mix well.
Shape mixture into eight 2” wide patties.
Preheat the prepared skillet over medium heat.
Place patties in skillet.
Cook over medium heat for 10 to 12 minutes or until meat is no longer pink and juices run clear, turning once.
Drain off fat.
