1 hrsThese Cherry Pecan Logs are old-fashioned candy shop magic you can pull off in your own kitchen.
A simple fondant of powdered sugar, evaporated milk, and rum flavoring gets kneaded with cherries until smooth and glossy, then shaped into six-inch logs and chilled.
Once firm, each log takes a bath in melted caramel and a roll through chopped pecans for a crunchy, sticky, irresistible coating.
Wrap them in wax paper, chill again, and slice into rounds for a candy box-worthy treat.
Kitchen Tips
- Knead the fondant until it’s truly smooth and shiny; this takes a few minutes but makes all the difference in texture
- Melt the caramels over a double boiler (not direct heat) to avoid scorching
- Work quickly when rolling in caramel; it firms up fast once off the heat
- These keep beautifully in the fridge for up to two weeks, making them ideal for holiday gifting
