Cauliflower in Fenugreek Leaves

Ingredients

1 medium cauliflower florets broken into flowerets
1 bunch fenugreek leaves
1 bunch green garlic
2 tablespoons ghee (clarified butter) or oil
1 small onion minced
1/2 inch ginger minced
3 each green chili peppers minced
1 teaspoon cumin seeds ground
1 teaspoon coriander ground
1/2 teaspoon turmeric powder
1 large tomato diced
1 handful cilantro leaves sliced
1 x salt to taste
1 x chili powder to taste

Directions

Slice fenugreek leaves and garlic.

Heat ghee or oil and cook onion and ginger until soft.

Add fenugreek leaves, garlic and chilies, and cook until almost dry.

Add tomatoes and remaining ingredients (except cauliflower)

and cook until tomatoes are soft.

Mash mixture with the back of a wooden spoon, then add cauliflower.

Add two tablespoons water to pan, cover, and simmer over low heat until cauliflower is done.

Curried Tofu Salad

I used red plum to take place of mango, and aslo added half of the cucumber, I didn't use mayonnaise, used 5 tablespoons low-fat plain yogurt, and severd with whole wheat pita,we used some spring mix at the bottom of the pita, my husband and I we both love this vegetarian tofu filling.
