Wheat berries have a satisfying pop-and-chew that pairs beautifully with the softer, nuttier texture of brown rice.
The two grains cook in stages in the same pot (wheat berries need a head start), then get finished with sauteed scallions and a simple hit of salt and pepper.
It’s the kind of side that makes roasted vegetables, grilled chicken, or a hearty stew feel like a complete meal.
Kitchen Tips
- Wheat berries need about an hour head start before the rice goes in. Don’t try to shortcut this or you’ll end up with crunchy berries.
- Sautee the scallions in a splash of water instead of oil for a lighter finish.
- Leftovers make a great base for grain bowls the next day. Top with whatever’s in the fridge.

Directions
In 2 quart pan, boil water.
Add berries, return to boil. Reduce heat, simmer, covered, 1 hour.
Stir in brown rice. Cover, simmer 50 minutes longer.
5 minutes before rice is finished, sauté scallion until softened.
Combine with rice and wheat mixture, along with spices.
