This is the Betty Crocker pancake recipe, from the 6th Edition Betty Crocker Cookbook, to make pancakes from scratch.

Directions

Beat egg with hand beater until fluffy; beat in remaining ingredients just until mixed.

For thinner pancakes:

Stir in additional ¼ cup milk.

Grease heated griddle if necessary. (To test if your pan or griddle it hot enoguh, sprinkle with a few drops water. If the water droplets skitter around, the heat is just right.)

For each pancake:

Pour about 3 tablespoons batter from tip of large spoon or from pitcher onto hot griddle.

Cook pancakes until puffed and dry around edges. Turn and cook other sides until golden brown.

Makes about nine 4-inch (10 cm) pancakes; about 100 calories per pancake.

Betty Crocker Pancakes

Blueberry Pancakes

Stir in ½ cup fresh or frozen blueberries (thawed and well drained).

Buckwheat Pancakes

Substitute ½ cup buckwheat flour and ½ cup whole wheat flour for the all-purpose flour.

Use 1 cup milk. If desired, sprinkle 1 teaspoon whole bran or wheat germ over each pancake just before turning. 10 pancakes.

Buttermilk Pancakes

Substitute 1 cup (250ml) of buttermilk for the milk.

Decrease baking powder to 1 teaspoon and beat in ½ teaspoons baking soda. 10 pancakes.

Ham Pancakes

Omit the sugar. Stir in ⅓ to ½ cup ground or cut-up fully cooked smoked ham.

Whole Wheat Pancakes

Substitute whole wheat flour for the all-purpose flour and packed brown sugar for the granulated sugar.

If you are using self-rising flour, omit baking powder and salt.

This is the recipe I've used for years out of my old Betty Crocker Cookbook - it's just packed up right now. There's just no reason to buy pancake mix....this is about as simple and so much better!

The basic and essential pancake - easy and my kids love them. I also add 1 mashed-up banana and a handful of dark chocolate chips...great!

Good pancakes, very filling. Made 8 (4-inch) pancakes instead of 9. I did add 1 tablespoon of ground flaxseed, to add more fiber to our diet. While I've been using my Pillsbury Pancake recipe for many years, this was a nice change, and will use this recipe again, as these pancakes were a bit hearty and quite filling. My husband and I were quite full after eating 3 pancakes each.

Double the recipe! Only makes 3 pancakes, unless you make tiny ones!

I have used this recipe for years my family loves it I also make it by adding 2 tbsp sugar and 2 tsp cinnamon with 1 chopped up apple (macintosh) they ) love them

Can you use buttermilk then milk instead, will work or not what do you think, will it better or not. I would like to know if that would be all right or not.

Buttermilk would be totally fine. I sometimes use buttermilk to replace milk, which actually adds a subtle tang. The pancakes are as delicious. Hope this helps. Happy Cooking :)

Betty Crocker cookbook that I have says you can substitute applesauce for some of the milk. I’m not home. Do you know what the receipt calls for?

I make them vegan by substituting 1/4 cup applesauce for the egg, and soymilk for the milk. I make these once a week. Delicious!

I make them vegan by substituting 1/4 cup applesauce for the egg and using soymilk instead if milk. I also use half white flour and half wheat. I make them at least once a week for the kids. Highly recommend!
