Beans with Tuna

A delicious side dish made with white beans, tuna and chopped tomatoes.

Ingredients

1/3cup olive oil
1each garlic clove, crushed
1pound beans small, white, soaked overnight, drained
2cups tomatoes chopped
2each tuna fish white, chunk, water packed, drained, 6-1/2oz ea
2each basil fresh sprigs, chopped fine
1x salt to taste
1x black pepper to taste

Directions

Saute garlic in oil until brown; discard garlic. Combine oil with beans and 1 1/2 quarts water in crockpot. Cover and cook on High 2 hours. Turn heat to Low, cover and cook 8 hours. Add remaining ingredients, cover and cook on High for 30 minutes.

Shrimp Paesano

The bigger the shrimp, the easier it is..I have been doing this over and over and love it. I used to work at Paesano's many years ago, when there was one in Corpus Christi, TX...and this is very good copycat!
