Butter melts in the pan while the oven preheats, then everything else goes straight into a blender: pumpkin, flour, a pinch each of salt and baking soda, sugar, milk, eggs, and vanilla. Blend until smooth, pour into the hot buttered dish, dust with cinnamon or cinnamon-sugar, and bake.
Pouring the batter into already-melted butter creates a slightly crisp, golden bottom that lifts away from the pan cleanly. The hot butter starts setting the edges immediately when the cold batter hits, which helps the pumpkin custard bake evenly through.
At high heat, the edges puff and set while the center stays dense and custardy. After 25-30 minutes you get something that cuts into squares and holds its shape on the plate.
