These little gems get their name from the way the apricot preserves peek through the coconut-flecked dough like precious jewels.

Cream cheese and butter blended together create an incredibly tender cookie base, while flaked coconut adds texture and tropical notes.

The preserves get mixed right into the dough rather than used as a filling, so every bite has that fruity sweetness.

Drop them by teaspoons and bake until the edges just start to turn golden.

Directions

Sift the flour, sugar, baking powder and salt together.

Mix butter and cream cheese then add to flour mixture; blend well.

Add the coconut and apricot preserves and blend well.

Drop by teaspoons on ungreased cookie sheet.

Bake at 350℉ (180℃) for 15 to 18 minutes until light brown.
