These apple and oat muffins are so moist, and they are delicious too, good for breakfast or a tasty snack.

Directions

Use cooking spray to coat 12 standard muffin pan cups. Put diced apple on paper towels to drain; pat dry.

Mix well flour, oats, sugar, baking powder, baking soda, salt and cinnamon in a large bowl. Blend yogurt, milk, oil, vanilla and egg in a medium bowl.

Preheat oven to 400℉ (200℃). Make a well in the center of flour mixture; stirring milk mixture, until just until moist. Stir in apple. Divide batter evenly among prepared muffin cups.

Bake until muffins spring back when pressed lightly in center, about 20 minutes. Remove muffins from pan, and cool on wire rack. Storage in an air-tight container, they can be last for up 2 weeks.
