Chocolate Pumpkin Cake
Original Recipe Yield 1 - 9x13 inch cake
Ingredients
1 (18.25 ounce) package chocolate cake mix
1 (15 ounce) can pumpkin
2 eggs
2 tablespoons vegetable oil
1 (16 ounce) container cream cheese frosting
Directions
1.Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
2.In a large bowl, mix the cake mix, pumpkin, eggs and oil for 3 minutes using a mixer on medium speed. Pour into the prepared pan and spread evenly.
3.Bake for 35 to 40 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool, then frost with cream cheese frosting.

CHOCOLATE MOUSSE FROSTING
3 c. heavy cream
1 1/2 c. sifted confectioners' sugar
3/4 c. cocoa powder
Dash of salt
In a chilled bowl blend ingredients, then whip until mixture holds a peak. Frosts 2 (9 inch) round layers, split in half plus sides and top. Refrigerate.
This is an awesome recipe I have made before. But, it's not my own creation, it's from theppk.com website. I'm sorry this recipe contains quite a few ingredients but many of them are things you may already have on hand.
Pumpkin Oatmeal Cookies:
Ingredients
2 cups flour
1 1/3 cups rolled oats
1 teaspoon baking soda
3/4 teaspoon salt
1 tsp cinnamon
1/2 teaspoon nutmeg
1 2/3 cups sugar
2/3 cup canola oil
2 tablespoons molasses
1 cup canned pumpkin, or cooked pureed pumpkin
1 teaspoon vanilla
optional: 1 tablespoon ground flax seeds
