Ground Beef and Corn Skillet Meal
Easy skillet ground beef meal.
INGREDIENTS:
1 pound ground round or ground chuck beef
1 cup soft bread crumbs
1 1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons Canola oil
1 1/2 cups corn kernels (about one 12-ounce can, drained)
1 medium onion, sliced
1 large can tomatoes, drained and diced (about 28 ounces)
PREPARATION:
Mix ground beef, bread crumbs, 1 teaspoon salt, and pepper.
Heat oil in skillet (with a cover) and cook meat mixture,
stirring frequently, until well browned. Add corn and onion
and sprinkle with remaining 1/2 teaspoon of salt.
Add tomatoes; cover and simmer for 25 minutes.
Serves 4 to 6.
