Italian Sausage Supper
Pork & Other Meats Card 79 Gr # 7
For 4 servings you need;
1 lb italian sausage, hot or sweet, casing removed
1 small egg plant, about 3/4 lb
1 medium green pepper, seeded, cored and cut into pieces
4 plum tomatoes, slices
1/2 tsp each, oregano, rosemary
1/4 cup finely chopped onion
Salt & pepper
2 Tlbsp olive oil
1 large clove garlic, minced
1/4 cup grated Parmesan cheese
Preparation:
- Cut sausage into 1 1/2 inch pieces.
Cut eggplant into 3/4 inch cubes.
Place in a shallow pan 7 x 11 inch baking dish.
On top of eggplant, place sausage, green pepper and tomatoes.
Sprinkle with oregano, rosemary, onion, salt and pepper.
Drizzle with olive oil.Bake at 375 degrees F for 25 minutes.
Stir in garlic. Comtinue baking another 15 mins,
until sausage is done.Sprinkle with cheese. Return to oven for 2 to 4 minutes
until cheese is melted.Serve hot from oven.
