You need:
4 scoops low fat frozen yogurt
4 Tbs Golden Circle diet strawberry jam
1 cup Golden Circle fruit salad in natural juice
2 x 97% fat free muffins
2 egg whites
1/4 cup caster sugar
Method:
whisk egg whites until peaks form, slowly add sugar. To ensure good peaking wipe your bowl out with lemon juice prior to whisking.
On individual plates slice muffin in half cross ways, place on plate.
Spread jam onto cake followed by fruit & frozen yogurt. Spread meringue all over layers so that none are visible and it resembles a mountain.
Bake at 200 degrees until the meringue browns, about 3-5 mins. The yogurt won't melt in that time.
