Rwandan food

I am doing a project in my AP European History class and we are having a United Nations meeting banquet in my class and I would like to make some Rwandan food. If you have any Rwandan food recipies I would greatly appreciate it if you could inform me of a recipe.

Amandazi (Fritters)
Ingredients :
100 gm Corn flour
30 gm Wheat flour
20 gm Sugar
1 x Egg
1/8 lt Milk (approximately)
Oil for frying
Method :
In a bowl, mix flour and sugar. Add the egg and milk and stir to form a viscous dough. In a pan, heat the oil. Add the dough one spoon at a time and fry until golden. Place on paper towels to remove excess oil and serve hot.

Bananas with Green Split Peas
Ingredients :
2 cup Dried green split peas, pre-soaked
4 x Ripe bananas
1/2 tsp Salt
2 tbl Palm oil, or other cooking-oil
1 sm Onion, thinly sliced
Method :
Cook the peas in enough water to cover until tender, about 1 1/2 hours.
Peel bananas and lay them whole on top of the peas without mixing.
Continue to cook for 10 minutes until bananas are soft, adding a bit of water if
necessary to prevent peas from sticking to the bottom of the pot.
Meanwhile, heat the palm oil in a skillet or pot large enough to hold the peas and bananas. Brown the onions. Then with a slotted spoon, remove bananas and peas from the first pot and add to the onions.
Sprinkle in the salt and continue to cook over medium heat, stirring gently but constantly, until oil has been absorbed. Serve hot

Rwanda Beef Stew
Ingredients :
2 lb Stewing beef, cut into 1/2- inch pieces
1 med Onion, chopped
2 tbl Peanut oil
3 lrg Green plantains, peeled and cut into 1 1/2-inch slices
4 tbl Freshly squeezed lemon juice
1 lrg Tomato, peeled, seeded, and chopped coarse
1 tsp Salt
1/2 tsp Poultry seasoning
1/4 tsp Freshly ground black pepper
Method :
Brown the beef and the onion in the oil in a heavy casserole. Rub the plantain slices with the lemon juice and add them to the browned beef and onions. Cook for 5 minutes over low heat, stirring constantly to make sure they do not stick. Add the remaining ingredients and water to cover. Cover the casserole and cook over low heat for 1 1/2 to 2 hours. Add more water if needed, and stir occasionally so the ingredients do not stick.

Plantain Cake
Ingredients :
2 x Ripe plantains, sliced in half, then in strips
225 gm Cottage cheese
3 x Egg yolks
3 x Egg whites
1 tbl Dry breadcrumbs
1 tsp Sugar
4 tbl Olive oil
1 tsp Ground cinnamon
Method :
Fry plantain strips in the oil until brown on both sides. Mix cheese, cinnamon, and sugar in a bowl. Beat egg yolks in one bowl, and the whites stiffly in another. Grease a baking dish, and sprinkle with breadcrumbs.
Fold stiff egg whites into yolks, pour a quarter into the dish and spread on the egg mixture and a layer of fried plantain. Cover with quarter of cheese and some olive oil. Repeat layers, until ingredients are used up.
Save a little egg mix and oil to pour over final layer. Bake in 180 deg. C oven for 40 minutes. Serve with meat.
