| 2 | cups | carrots | grated |
| 2 | cups | brown sugar | packed |
| 1 1/2 | cup | vegetable oil | |
| 1/2 | cup | pineapple, canned | drained |
| 1 | teaspoon | vanilla extract | |
| 5 | large | eggs | |
| 1 | cup | nuts | chopped |
| 2 | cups | flour, all-purpose | |
| 2 1/2 | teaspoons | cinnamon | |
| 2 1/2 | teaspoons | baking soda | |
| 1 | teaspoon | salt |
Mix first 7 ingredients together. Add flour, cinnamon, soda and salt. Bake 350 degrees for 25 to 30 minutes. Done when toothpick in center comes out clean or top springs back.
Refrigerate cake before decorating.

This was realy good. A big hit and easy too. I did cheat and use 1/2cup of salsa instead of peppers because I didn't want to go to the store. I added garlic, paprika and cumin. Turned out great
