Ingredients

1 pound new potatoes cooked, diced
1 cup corn canned, drained
1 small sweet red bell pepper diced
1/2 cup scallions, spring or green onions sliced
1/2 cup picante sauce
2 tablespoons vegetable oil
2 tablespoons cider vinegar
1/2 teaspoon cumin ground
1/4 teaspoon salt
2 tablespoons cilantro chopped, optional

Directions

Combine potatoes, corn , pepper, and onions in medium bowl.

Combine picante sauce, oil, vinegar, cumin and salt, mix well.

Gently toss with potato mixture, chill.

Sprinkle with cilantro,and serve with additional picante sauce.
