| 2 | large | eggs | |
| 1 | cup | sugar | |
| 1 | cup | eggnog | |
| 1/2 | cup | butter | or margarine |
| 2 | teaspoons | rum extract | |
| 1 | teaspoon | vanilla extract | |
| 2 1/4 | cups | flour, all-purpose | |
| 2 | teaspoons | baking powder | |
| 1/2 | teaspoon | salt | |
| 1/4 | teaspoon | nutmeg |
Heat oven to 350 degrees. Grease bottom only of a 9x5 loaf pan. Beat eggs in large bowl. Add sugar, eggnog, margarine, rum extract and vanilla. Blend well. Lightly spoon flour into measuring cup; level off. Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Pour into greased pan. Bake for 45 - 50 minutes or until a tooth-pick inserted in center comes out clean. Cool 10 minutes, remove from pan.
Makes one 16-slice loaf.
I had bunches of left over eggnog, made this quick bread and put it in the freezer. YUMMY now and YUMMY later!!

Are you one of those people who frequently request substitutions when ordering meals in restaurants? You know who you are. All you "sauce-on-the-siders," ingredient changers, and...
I love this recipe, it's easy and delicious and uses ingredients I usually have on hand. I recommend adding garlic at the END of the browning of the chicken, so garlic won't burn. If you use regular Soy Sauce (instead of Low Salt), add less - 1/4 cup is plenty.
