2 hrsThis meatloaf hits like a hug from your favorite diner booth.
Ground beef gets mixed with milk-soaked bread cubes, Parmesan cheese, chopped onion, and a touch of oregano for an Italian lean.
It bakes low and slow, then gets smothered in tomato sauce and topped with slices of mozzarella that melt into a bubbly, golden blanket.
Slice it thick and serve it up. This is comfort food that doesn’t try to be anything else.
Kitchen Tips
- Mix the meat gently with your hands; overworking it makes the loaf dense and tough instead of tender
- Drain the fat from the pan before adding the tomato sauce so the bottom doesn’t sit in grease
- Let the meatloaf rest for 10 minutes after baking so it holds together when you slice it
- Leftover meatloaf makes killer sandwiches the next day, cold or reheated
