| 6 | ounces | chocolate (semi-sweet) | semisweet |
| 1/2 | cup | water | hot |
| 4 | each | egg whites | |
| 1 | teaspoon | vanilla extract | |
| 2/3 | cup | sugar | |
| 2/3 | cup | flour, all-purpose | |
| 1 | teaspoon | baking powder | |
| 1 | x | salt | to taste |
| 1 | each | powdered sugar |
In large heatproof bowl set over hot water, melt chocolate with water, stirring until smooth.
Remove from heat; let cool slightly. Whisk in egg whites and vanilla.
Stir together sugar, flour, baking powder and salt; stir into chocolate batter just until combined.
Pour into lightly greased 8 inch square cake pan. Bake in 350F oven for 20 to 25 minutes or until edges pull away from pan.
Let cool on rack; dust with icing sugar.

I have come to the conclusion that my first year in college was definitely a weird one. There were new experiences and events I was a part of; some I liked and others that have easily been forgotten. ...
I have not made this yet, but my mother made mayonnaise cakes when I was a child ( I'm 45) and she got the recipe from my grandmother. It sounds just like what my mother used to make. If it is as good as that, the cake is not only FABULOUS, but so easy. Its a great cake to make at the spur of the moment and also, you don't need any eggs! It is moist and delicious. I came to the library just to use the internet to locate this recipe and was suprised to find it in no time. Thanks to whomever is responsible for making it available. Kris
