| 2 | teaspoons | olive oil, extra-virgin | |
| 2 | teaspoons | lemon juice | |
| 6 | large | radicchio leaves | rinsed and dried |
| 3 | ounces | monterey jack cheese | cut into 1/4 inch thick slices |
| 1 | x | black pepper | freshly ground |
Mix oil and lemon juice; brush mixture all over radicchio leaves.
Set leaves, cut side up, in a 9x13 inch baking dish.
Place an equal portion of the cheese in each radicchio cup.
Sprinkle with pepper.
Bake in a 350 degree F oven just until the cheese melts, 4-6 minutes.
Serve hot or warm.

This cookie is surpirsingly very good you would never know that there was mayonnaise in them.. they tase more like sugar or peanut butter cookies to me.
