Warm Radicchio Cheese Puddles

Ingredients

2 teaspoons olive oil, extra-virgin
2 teaspoons lemon juice
6 large radicchio leaves rinsed and dried
3 ounces monterey jack cheese cut into 1/4 inch thick slices
1 x black pepper freshly ground

Directions

Mix oil and lemon juice; brush mixture all over radicchio leaves.

Set leaves, cut side up, in a 9x13 inch baking dish.

Place an equal portion of the cheese in each radicchio cup.

Sprinkle with pepper.

Bake in a 350 degree F oven just until the cheese melts, 4-6 minutes.

Serve hot or warm.
