| 1/2 | cup | snow pea pods | fresh, cut into 1 inch diagonal pieces |
| 1 | each | zucchini | small, thinly sliced |
| 2 | each | cherry tomatoes | quartered |
| 1 | tablespoon | pine nuts | toasted |
| 1 | tablespoon | shallots | minced |
| 1 1/2 | teaspoons | red wine vinegar | |
| 1 | teaspoon | vegetable oil | |
| 1/8 | teaspoon | black pepper |
Place peas in a vegetable steamer over hot water.
Cover, Steam 2 minutes, or until tender.
Drain and rinse under cold water.
Combine Peas, Zucchini, Tomatoes and Pine Nuts in a medium bowl.
In a separate bowl, combine Shallot, Vinegar, Oil and Pepper; mix well with a whisk.
Pour over vegetables and toss gently to mix well.
Cover and chill thoroughly.
