Ingredients

1/2cup snow pea pods fresh, cut into 1 inch diagonal pieces
1each zucchini small, thinly sliced
2each cherry tomatoes quartered
1tablespoon pine nuts toasted
1tablespoon shallots minced
1 1/2teaspoons red wine vinegar
1teaspoon vegetable oil
1/8teaspoon black pepper

Directions

Place peas in a vegetable steamer over hot water.

Cover, Steam 2 minutes, or until tender.

Drain and rinse under cold water.

Combine Peas, Zucchini, Tomatoes and Pine Nuts in a medium bowl.

In a separate bowl, combine Shallot, Vinegar, Oil and Pepper; mix well with a whisk.

Pour over vegetables and toss gently to mix well.

Cover and chill thoroughly.
