This vibrant side dish transforms humble red cabbage into something you’ll crave with every roast dinner.

Garlic-scented cabbage shreds get tossed with apple cider vinegar, soy sauce, honey, and ground ginger, then baked low and slow until meltingly tender. The sauce reduces into a glossy glaze that clings to every strand, delivering sweet, sour, and savory notes in perfect harmony.

Pair it with pork chops, roasted chicken, or holiday ham for a side that steals the spotlight.

Kitchen Tips

  • Core and shred cabbage thinly for even cooking and better sauce absorption
  • Use a stainless steel or enameled skillet to prevent vinegar from reacting with metal
  • Bake covered for the first 40 minutes to steam cabbage tender, then uncover to concentrate flavors
  • Taste and adjust honey or pepper at the end to balance sweet and heat to your preference
