| Mushroom Extract | |||
| 1/2 | cup | mushrooms, porcini | dried |
| 2 1/2 | cups | water | |
| Mushroom Sauce | |||
| 1/3 | cup | onions | minced |
| 1/2 | cup | water | |
| 1 | tablespoon | soy sauce, tamari | |
| 1/2 | teaspoon | salt | |
| 1/2 | teaspoon | maple syrup | |
| 1 | x | black pepper | |
| 1 | each | parsley sprigs | |
| 1 1/2 | tablespoons | arrowroot flour | dissolved in 2 tb water |
EXTRACT:
Place mushrooms in water in a saucepan and bring to a boil.
Reduce heat and simmer for 15 minutes.
Remove mushrooms with a slotted spoon and rinse.
Chop finely and reserve.
Strain extract.
SAUCE:
Combine onions, water, tamari, salt, syrup, pepper and rosemary in a saucepan.
Cover and simmer over medium heat for 5 minutes.
Remove and discard parsley.
Add extract and chopped mushrooms.
Bring to a boil.
Add arrowroot, cook and stir till thickened.
Taste for seasoning.
Use on top of rice, potatoes or pasta.
