The secret is the deviled ham folded right into the yolk mixture, which gives the filling a smoky, savory punch that plain mayo-and-mustard versions just don’t have. Mix the yolks with ham, a shot of Worcestershire sauce, grated onion, and prepared mustard, pile it back into the whites, and dust with paprika.
