Fresh lemon and lime juice mixed with orange juice create a triple-citrus base that tenderizes the chicken while soaking it with tangy flavor. Cilantro and Mexican taco seasoning round it out with herbal freshness and warm spice.
The citrus trio does more than add flavor. The acid breaks down proteins on the surface of the chicken, helping the seasoning penetrate deeper during the soak. Four hours is the sweet spot. Less than that and the flavor stays on the surface. Much longer and the acid starts making the texture mushy.
