150 minWorcestershire sauce is the not-so-secret ingredient here. The anchovy-based depth of Worcestershire mimics the umami compounds you’d get from dry-aging, which is why steakhouse marinades have leaned on it for decades. Combined with lemon juice for acid bite and olive oil to carry the flavors into the meat, this 2-hour soak does serious work on a sirloin.
Dried minced onion and garlic stick to the surface and char into a flavorful crust when the steak hits the grill or broiler. The final move that pulls everything together is the warm butter, parsley, and extra Worcestershire mixture poured over the resting steak just before slicing. That butter melts into the carved slices and bastes every bite.
Serve with grilled vegetables, a baked potato, or simple steakhouse mushrooms for a meal that punches well above its weight. Pair with a bold red wine or a cold dark beer.
Pro Tips
- Take the steak out of the fridge 30 minutes before cooking. Room-temperature meat cooks more evenly.
- Pat the steak dry after marinating. Surface moisture prevents the crust from forming on the grill.
- Use a high-heat grill or screaming-hot broiler. Hot fast cooking on a thick sirloin keeps the inside juicy.
- Always rest the steak 5 minutes before slicing. Cutting too soon dumps the juices onto the cutting board.
Variations
- Use lime juice instead of lemon for a slight tropical lift.
- Add 1 teaspoon of smoked paprika to the marinade for a smoky depth that complements grilling.
- Stir 1 minced anchovy into the finishing butter for serious umami amplification.
